“In the end, we now have a 100% customized tool that allows us to deliver better, consume less, and reduce our environmental footprint.”
With rapid growth and a demanding portfolio of restaurant clients, Gustomio chose to automate and optimize its delivery routes with PTV OptiFlow. The results : 20% lower operating costs, better fleet utilization, and reduced fuel consumption.
Food distribution for professionals, particularly in the restaurant industry, operates in an especially demanding environment. Restaurateurs expect fast, reliable, and regular deliveries, while constraints are multiplying : dense urbanization, traffic regulations, rising transportation costs, traceability requirements, and the growing need for sustainability.
In this context, managing just-in-time logistics is a real challenge. Route optimization has become a strategic lever to balance service quality, cost control, and carbon footprint reduction.
Founded in 2015 by Laurent Knibbe, Gustomio (formerly Gusto) has, in less than ten years, become the leading wholesaler of Italian food products for restaurant professionals in the Paris region. Its mission is simple: deliver high-quality products sourced directly from Italy to foodservice professionals.
This ambition goes hand in hand with exceptional growth. With nearly €30 million in revenue expected in 2024 and a record 526% increase between 2020 and 2023, Gustomio has been ranked “Growth Champion” for five consecutive years by Les Échos and three times as one of the “Fastest Growing European Companies” by the Financial Times.
Behind these impressive numbers lies a demanding logistics model, considered a true strategic pillar. As founder Laurent Knibbe puts it : “Customer service and transportation are closely linked. The real challenge is distribution!”
Every day, Gustomio processes orders in the morning, prepares them from 3 pm onwards, and begins deliveries as early as 7 am the next day. This just-in-time management of dry, fresh, and frozen goods means even the smallest error can immediately affect customer satisfaction.
But with the surge in order volumes, manual route planning became far too complex, time-consuming, and error-prone. “With rising order volumes, manual planning became too complex and error-prone. We needed a solution to automate the process,” explains Laurent Knibbe, Founder of Gustomio.
To meet this challenge, Gustomio adopted PTV OptiFlow, PTV Logistics’ SaaS solution for route optimization. Directly connected to the company’s ERP, it automatically imports orders and generates optimized delivery plans in seconds.
Beyond automating planning, PTV OptiFlow incorporates the specific constraints of the business. The software considers the weight and volume of goods, the number of delivery points, and vehicle capacity, creating balanced and efficient routes. Teams still retain control to adjust plans according to real-world needs—for example, by redefining address sectors to avoid duplicate deliveries caused by Paris’ district boundaries. “From one street to another, the Paris district changes, which used to result in double deliveries. With OptiFlow, we can take back control and adapt plans to reality on the ground,” explains Knibbe.
It is this combination of automation, efficiency, and flexibility that won over Gustomio.
In short, PTV OptiFlow enables Gustomio to :
Optimized use of a 20-truck fleet and reduced fuel consumption
Routes generated automatically in seconds—no more manual entry
Fewer kilometers driven and lower transport-related emissions
The deployment of PTV OptiFlow took just four months, without any operational disruption. This rapid implementation reflects both Gustomio’s digital maturity and the solution’s ability to integrate seamlessly into existing IT systems. The company was able to transition to a new logistics model without slowdown, while immediately reaping performance gains.
The collaboration between Gustomio and PTV Logistics demonstrates the importance of a strong technology partnership. More than just a tool, PTV OptiFlow has become a true growth driver, supporting the company throughout its expansion.
PTV Logistics’ guidance ensured a smooth integration and quick adoption by Gustomio’s teams—an essential condition for getting the most out of the solution.
